The Institute of Advanced Study in Science and Technology (IASST), under the Department of Science and Technology, has developed a new biosurfactant using ghee. It was produced with the probiotic bacterium Lactobacillus plantarum JBC5, with ghee as the main raw material. The compound showed strong antibacterial action against Staphylococcus aureus, a bacterium that causes skin and wound infections. It recorded a 60% emulsification index and stayed stable at temperatures up to 276°C.
